ANZAC DAY

Friday 25th April was Anzac Day - Remembrance Day for Australia and New Zealand. Ethan and I "remembered" by baking anzac biscuits. They were really yummy and very easy. There are lots of recipes online. This one is from Edmonds:

1/2 cup plain flour (a cup is 250ml)
1/3 cup sugar
2/3 cup coconut
3/4 cut rolled oats
50g butter
1 tbsp golden syrup
1/2 tsp baking soda
2 tbsps boiling water

Mix together first 4 ingredients. Melt butter and syrup. Dissolve baking soda in boiling water than add to the melted butter. Stir liquid into dry ingredients. Place about tbsp of mixture on greased baking trays and cook for 15 mins or until golden. Should get 16 - 20 biscuits from this quantity. Flaten slightly if you want them crisper.
